Jerk Seasoning

Caribbean Jerk Seasoning

This is obviously a dry seasoning. It can be used as a rub or to season meat. As a note, you will need to make a batch of the Cajun Seasoning to make this recipe.

1 tsp (5 g) dry mustard
1 tsp (5 g) dehydrated onion
1/2 tsp (2.5 g) cinnamon
2 tsp (10 g) cayenne pepper
1/2 tsp (2.5 g) ground nutmeg
1/2 tsp (2.5 g) ground allspice
1/2 tsp (2.5 g) dried thyme
1 tsp (5 g) seasoning salt
1/2 tsp (2.5 g) turmeric
1 tsp (5 g) Cajun Seasoning

Pizza-Spaghetti Sauce

Beyond the dough, there are two other main components of pizza – your sauce and your toppings. If you’ve got two out of three down pat, then the toppings should be a piece of GF pizza pie! And I have it on good authority that my sauce is one of the best things about my pizza. So here’s the recipe for your taste buds’ pleasure!

Bill’s Pizza Saucepizzasauce

1 can tomato sauce
1 can tomato paste
1 large red onion
2 tomatoes
2 tbsp (28 g) minced garlic
1 tbsp (15 g) oregano
1 tbsp (15 g) pepper flakes
2 tsp (10 g) basil
1 tsp (5 g) parsley
1 tsp (5 g) marjoram

  1.  Dice all the veggies and add everything except the tomato sauce and paste to a saucepan with a little olive oil. Cook on medium high until the onions are translucent and soft.
  2. Add the sauce and paste, stir and continue to cook on medium for about an hour or so. Add about a quarter cup of water to thin out the sauce a bit.

For Spaghetti sauce, use two cans of tomato sauce and add ground beef or ground Italian sausage. Serve over GF pasta of your choice!

Tex-Mex Taco Seasoning

This one is a great all-around seasoning for just about anything in the Tex-Mex arena. It’s a great stand-in for taco seasonings in a package or to be used for quesadillas.

3 tbsp (45 g) Cumin
2 tbsp (30 g) onion powder
2 tbsp (30 g) Cayenne
2 tbsp (30 g) Paprika
2 tbsp (30 g) chili powder
1 tbsp (15 g) Oregano
1 tbsp (15 g) Cilantro
1 tbsp (15 g) garlic powder

Mix and use liberally on food! Note if you want a non-spicy version (such as the one I use for the kids and wife), leave out the Cayenne.

2 1/2 tbsp (40 g) Paprika
2 1/2 tbsp (40 g) Cayenne
2 tbsp (30 g) garlic powder
1 tbsp (15 g) onion powder
1 tbsp (15 g) oregano
1 tbsp (15 g) thyme


As an interesting side note – my brother-in-law loves this seasoning. Every time I make a batch, I do the measurements in cups instead of tbsp, etc.

At any rate, for his 40th birthday, I actually put together a spice jar of it for him and attached a label. I thought you guys might like a gander at the label.
